Besides our winemakers, yeast may be the hardest workers in the entire winemaking process. Can microscopic organisms have a significant impact on a wine?

For thousands of years, humans have been mystified by the magical process of fermentation. As modern-day winemakers we understand that naturally occurring yeast affects how quickly fermentation begins, how rapidly it progresses, and how the final product will look, smell and taste. Project #12 gave our winemakers the opportunity to explore the effect of different yeast strains on the exact same grapes. This chardonnay’s fermentation were driven by the VL2 and Delta strains.

So what's the difference between VL2 and Delta?

VL2 This chardonnay’s fermentation was driven by the VL2 strain, a yeast that was isolated in the caves of Burgundy specifically for Chardonnay.
Delta This chardonnay’s fermentation was driven by the Delta strain, more commonly used in aromatic white wines like Sauvignon Blanc and Riesling.
