Our traditional method sparkling wine aged on lees for 5+ years in bottle before disgorging in Spring 2016. 100% Chardonnay with low press yields then fermented & aged in neutral oak barrels prior to blending and tirage in Spring 2011. Dosage of 12g/L to maintain balance of acidity & retain freshness.
