2016 Pinot Noir Rosé
The 100% Pinot Noir Rosé is made in the traditional 'saignee' method, where pink juice is drained-off from the Pinot Noir grape must during the 'cold soak' period before fermentation. This serves two purposes - it concentrates the skin to juice ratio in the Pinot Noir grape intended for our 'red' Pinot Noir and creates this beautifully coloured and delicious wine. This wine is made to be 'bone dry' to best express the intensity of the Pinot Noir juice as a finished wine.
