Our Rusty Shed Chardonnay bottling is an expression of our best parcels of Chardonnay and our best barrels. The fruit is whole bunch pressed to yield only the purist juice then gently rolled to barrel for fermentation. In 2013 the fermentation took up to 3 months. A decision was made in the winter whether to inhibit the secondary malolactic fermentation or to let the wine evolve further. Barrel selections for the final blend were made in summer 2014, and then the wine was racked off lees & blended in July before bottling in September 2014.
